I’m slightly embarrassed to admit, I had no idea what Mascarpone cheese was. After some time on Google I found out that I knew what it was, I just didn’t know what it was called. It’s an Italian cream cheese but with a citrus taste. If you’ve ever had a really good Tiramisu, you better believe it’s made with Mascarpone!

These are perfect for Halloween, Earth Day, or Father’s Day if Dad is a fisherman. There are a lot of recipes around the net, but I chose this one because it’s crystal clear with tons of pictures on how to make the dirt topping. The better you make the dirt, the more you get the effect of the worm coming out of the cupcake. These black bottom cupcakes look amazing in real life because of the contrast between the black and white. The black is devils food or just your best chocolate, the white is a cream cheese filling. I encourage you to experiment with different fillings and cupcake recipes. When you get the combination just right, it’s like heaven. I love these cupcakes because they look so much harder to make then they really are.  The key to this is the white chocolate covered pretzel bodies.  When you first glance at the skeleton, you can quickly see that the head is a marshmallow but it’s hard to tell what the ribcage is made from, until you know it’s a pretzel, in fact 3 pretzels.  Upon closer look you can see the arms are pretzels as well. I realize it’s only September but we are 2 months from Halloween and it’s time to start cooking and trying out recipes.  I say “trying out” because Halloween cupcakes can be tricky like these clear caramel broken glass cupcakes.  The Martha Stewart recipe is just crap when it comes to the clear glass, which in my opinion makes or breaks the cupcake.  From the reviews of the recipe I wasn’t the only frustrated one.  Here is a link that helped.  Following these directions I nailed the glass on my first try: Make Sugar Glass
