Superbowl Party Nacho Cupcakes – Recipe

Can you believe that Superbowl weekend is here already?  That means a few things:

1. Winter is almost over.  Yay!
2. Football is over.  Yay!
3. Time for me to flex my cupcake muscles.

Because the Superbowl festivities at my house start early.  Usually around 2:00 PM I typically baked three sets of cupcakes for the guys.  They are all mainly sport themed and these nacho cupcakes definitely make the cut.  At first glance they actually look like nachos – people began to wonder if I’m crazy or perhaps the sweet chocolate with salsa might actually be tasty.

New Year’s Champagne Glass White Cupcakes [Recipe]

These are perfect for the Champagne toast during New Year’s or any other special occasions where Champagne is most likely to be served.

The recipe itself is quite simple.  It’s a standard white cupcake made with white cake mix.  If you want to bake them from scratch, as most hard core bakers will, then you can follow this recipe instead of the boxed.

The candy beads are candies called sixlets.  They can be found here on Amazon but also where ever you buy your normal baking supplies from.  Hobby Lobby has them for about $6.00 and some Wal-Mart’s carry them as well.

For the champagne glasses the shallower the better.  It will take some looking to search them out, but you actually want to use disposable margarita glasses.  I found mine at the dollar store.

When baking the cupcakes make them more like muffins.  Fill the pan up so that they crown over so the tops puff out enough to span the diameter of the margarita glass.  Frost them and then add your sixlets.  Adding the sixlets is agonizing but after the first one is done you will be so happy with the result, the rest will be fun.

Spaghetti and Ferrero Rocher Chocolate Meatball Cupcakes [Recipe]

Here is another one of those recipes that I am probably late on.  I was actually looking for a spaghetti sauce recipe and the Google auto fill typed in “Spaghetti Cupcake”.  I was shocked to see a ton of spaghetti cupcake pictures.  How have I never seen this before?

The trickiest part to this recipe is the picture.  How do you take a picture and make it look appetizing?  At first glance the recipe looks like a challenge but it’s not.  The meatball is actually a Ferrero Rocher chocolate dipped in strawberry preserves.  The spaghetti is just piped frosting put on by a homemade applicator – yes the corner snipped plastic baggie filled with frosting.  This time you are making spaghetti so it’s ok to be sloppy.  It’s ok to eat more than one if you have a high Meat-a-ballism.  Hit the Recipe Button and BAKE!
