There really isn’t too much to say about this recipe. The author tried several things before coming up with this perfect combination. As you know bananas foster is typically made with brown sugar, cinnamon, dark rum and banana liqueur. Usually it’s set on fire and served over ice cream. This recipe eliminates the flames and ice cream and substitutes a cupcake. I would still suggest adding some dark rum although the recipe below is alcohol-less.
Also, if you get a little lazy and want to skip the foster, the banana coconut cupcakes are still divine.

If you just want a peanut butter cupcake recipe, this is the best I have tasted so far.
Warning – the pictures are going to look way more intimidating then the actual recipe. Also, don’t be put off by peanut butter with the peanut butter frosting….it’s not as overbearing as it sounds. It’s actually quite perfect.
Now those are the warnings, here are the tips: As the author suggest, break the recipe up into two parts by cooking the praline a day or so ahead. I just found that the total process took a little bit longer than I expected, part of the reason was the caramelizing bananas. That was my first time attempting it and had to do it twice. It’s just like frying platinos but if you overcook them they get soggy. At this point in the recipe I was so close to completion that caramelizing a 2nd banana was torture…I was so close but so far. I have to admit, I wasn’t ready. I had know idea what I was in for. I actually had to make this twice because the banana cupcakes came out so good, and I got a phone call interrupting my baking so I just served those up.
The second time I completed the recipe, the third time, I added cherries in between and on top. The possibilities are endless! Like the recipe advices, follow the directions and make two batches. Multiplying everything by 2 to make one big batch does not work well. What are you waiting for…..Click the recipe button and bake!
