Raspberry Curd Meringue Cupcakes – Not Easy!

4658384410_dc782f063b_b Every now and then I venture onto a recipe that is just a little bit out of my comfort zone in regards to difficulty.  This is a little different because it’s actually a Meringue.  I’m used to things taking 25 minutes to bake but when I read the instructions I couldn’t believe it actually said 3 hours!!

I actually had to go to Google and type, “How long does it take to bake meringues!” Because I did not believe it.  The result should be sort of dry and hard on the outside and soft on the inside.  I did not quite make it. In fact, whatever I called myself making looked nothing like the picture and was barely edible.

You win some  you lose some and I lost this one.  At least I had some ice cream and berries and whip cream to snack on why I watched Scandal.
