Oreo Crust Cheesecake Cupcakes with Reese’s Pieces Topping (Recipe)

mini-cheesecakes-platingpixels

Could there really be such a creation that is one part cheesecake,  one part Oreo and one part Reese’s Peanut Butter Cup?  Can all three of these whimsical treats play together in the confines of a standard sized cupcake liner?  Yes!!

This recipe can be made as a full cheesecake or you can execute the recipe like Matthew and Olia from Plting Pixels did.  If you choose to make the cupcakes you will have to make the crushed cookie crust first and then scoop it into the cupcake liners.  After that’s complete you  fill the remainder of the liner with the cheesecake mix, bake and your done.

Reese’s & M&M’s Frankenstein Cupcakes

Reeses-Frankenstein-Cupcakes

How perfect are these for Halloween. Just when you think all of the creative ideas are taken in walks Frankenstein.  The chocolate chips are actually supposed to be Frankenstein’s bolts but they start to get confusing with his eyes.  Try them with and without the bolts.  HINT – They taste the same.  The other tricky part of these cupcakes are the eyes.  In the recipe they use white chocolate melted down topped with M&M’s.  I cheated.  I always have some Wilton candy Eyeballs around he house.  They are edible and take 2 seconds to pop on.  Melting down the chocolate was just a little too much for me.

These are as scarey as they are tasty.  Hit the recipe button and BAKE!!

Melting Snowman Topped Cupcakes [Recipe]

Melting Snowman Topped Cupcakes [Recipe]

In the nature of Christmas and all things winter I thought these were cute and could easily go on top of a cupcake! You can either put a cookie with the snowman on top of the cupcake, or put the melted snowman directly on top of the cupcake. Both work, and both look amazing.
Here are the steps to make the Snow and the snow man:

• Line a baking sheet with waxed paper.
• Place cooled cookies on prepared baking sheet.
• In a medium microwave-safe bowl microwave candy coating on 50% power for 2 1/2 to 3 minutes or until melted and smooth, stirring every 30 seconds.
• Spoon melted coating over each cookie to cover cookie and resemble melted snow.
• While coating is still tacky, add a peanut butter cup for a top hat and decorate with sprinkles or other candies to resemble snowman faces (If using frosting to make snowman faces, add it when the candy coating is dry.)
• Let stand until set.

Like the other recipes, I’ve supplied the link to the recipe, but I also wanted to point out some things to make it easier.
VANILLA CANDY
The Vanilla Candy Coating used for the snowman can be found at Hobby Lobby, Joann’s Fabric or Michael s. I could not find it at our supermarket.
SNOWMAN HATS
They use a mini Reese’s cup. The top rim is sliced off from the top of the cup. Then the bottom of the remaining portion is chopped for the top of the hat. The middle portion left is for you to snack on while your baking. 
LAST TIP
Don’t be so quick to put the Reese’s cup in the snow because they will start to melt. Let things cool and then add the cups.

Thanksgiving Oreo Cookie Turkey Cupcakes

Thanksgiving Oreo Cookie Turkey Cupcakes

Thanksgiving will be here before we know it.  In a search to find something to do with the dreadful candy corns I had left over from our Hurricane Halloween Party I stumbled on to some recipes.

Brown Eyed Baker provided a link to the Oreo Cookie Turkeys and she had the brilliant idea of putting them on top of a cupcake.  You can do many things with the Oreo Cookie Turkey, but putting it on a cupcake is shear genius.  Mix and match colors and cupcake flavors as you see fit, or as your pantry has ingredients.  I have my turkeys sitting on Red Velvet today.   Hit the Recipe but below and start baking!
