The most spectacular thing about these cupcakes, is how easy they are to make.  When I first looked at the pictures, I thought I would need to a degree in bakeology to pull this off, but it’s soooo not true.  These are actually easy-peasy.

Just a couple of watch outs:

  • If you use liners that are too thick you won’t see the Oreo cookie imprint on the bottom.  They will still taste great but showing off the cookie is one of the great parts of this recipe.
  • Be careful with the oven temperature and cooking time.  Watch it closely.
  • The other thing that is not really a watch out, but some advice.  Make sure you chill these before you serve them.  Trust me, it will be worth the wait.

Makes 30

  • 42 Oreo, cream-filled chocolate sandwich cookies, 30 left whole and 12 coarsely chopped
  • 908 grams (2 pounds or about 3 2/3 packages) cream cheese, room temperature
  • 225 grams (1 cup) sugar
  • 1 teaspoon pure vanilla extract
  • 4 large eggs, room temperature, lightly beaten
  • 230 g (1 cup or 8 ounces) sour cream
  • Pinch of salt
  1. Preheat oven to 275° F.  Line standard muffin tins with paper liners.  Place 1 whole Oreo cookie in the bottom of each lined muffin cup.
  2. In the bowl of a stand mixer, fitted with the paddle attachment, beat cream cheese on medium-high speed until smooth, scraping down sides of the bowl as needed.  Gradually add the sugar, and beat until combined.  Beat in the vanilla.
  3. Drizzle in eggs, a little at a time, beating to combine and scraping down sides of bowl as needed. Add in sour cream and salt, beat to combine.  Using a large spatula, fold in the chopped Oreo cookies.
  4. Divide batter evenly among the cookie-filled muffin cups, fill each cup almost to the top.  Bake, rotating muffin tins halfway through, until the filling is set, about 22 to 28 minutes.  Transfer the muffins tins to a wire rack to cool completely. Refrigerate (in the muffin tins) at least 4 hours (or overnight). Remove from tins just before serving.

If you haven’t ventured into the cupcake decorating arena, this is the perfect recipe to do so.  It looks super hard, and is actually super easy.  The tips do all the work.

Let’s talk about the tips and the decorating – the rest is just a cupcake with half an Oreo on top.

The recipe calls for two specific tips:

#98 ruffle decorating tip
#30 closed star decorating tip

Don’t feel compelled to use these tips.  If you have a beginners kit and do not feel like buying more crap, then experiment with what you have.  The picture is just a guideline.  I have the Wilton 50 piece beginners kit and any standard petal tip and leaf tip will work.

The key here is to layer the flower petals so that each layers petals, go in between the petals that are below.

Lastly, either put these in the fridge right as you complete them or serve them up at once.  The frosting will droop if the cupcakes sit out too long.

These are Thanksgiving cupcakes, there is no doubt about it.  I tried to place them in multiple categories and you really can’t.  Fall cupcakes?? Maybe.

The design of these cupcake are just divine because the acorns are brilliant.  If you look closely you can see that they are made from Hershey’s kisses and they have Nutter Butter Mini’s as tops.  When you twist the minis apart, there is still just enough peanut butter there (resist the need to lick) and use that peanut butter to stick to the Hershey Kisses.  Then use a chocolate chip for the little acorn stem.

The hardest part of the whole damn recipe was the stem!  The recipe will tell that the heat from your hand is enough to melt the acorn stem to the top of the “Nutter Butter” mini.  I must be cold blooded because it didn’t melt.  What I ended up doing  using a warm cup of coffee and pressing the chip up to the cup.  Then I stuck it right to the top.  Worked like a charm.  Let’s see how well you do.  Hit the Button and BAKE!

Thanksgiving will be here before we know it.  In a search to find something to do with the dreadful candy corns I had left over from our Hurricane Halloween Party I stumbled on to some recipes.

Brown Eyed Baker provided a link to the Oreo Cookie Turkeys and she had the brilliant idea of putting them on top of a cupcake.  You can do many things with the Oreo Cookie Turkey, but putting it on a cupcake is shear genius.  Mix and match colors and cupcake flavors as you see fit, or as your pantry has ingredients.  I have my turkeys sitting on Red Velvet today.   Hit the Recipe but below and start baking!

Here is another one of those recipes that I am probably late on.  I was actually looking for a spaghetti sauce recipe and the Google auto fill typed in “Spaghetti Cupcake”.  I was shocked to see a ton of spaghetti cupcake pictures.  How have I never seen this before?

The trickiest part to this recipe is the picture.  How do you take a picture and make it look appetizing?  At first glance the recipe looks like a challenge but it’s not.  The meatball is actually a Ferrero Rocher chocolate dipped in strawberry preserves.  The spaghetti is just piped frosting put on by a homemade applicator – yes the corner snipped plastic baggie filled with frosting.  This time you are making spaghetti so it’s ok to be sloppy.  It’s ok to eat more than one if you have a high Meat-a-ballism.  Hit the Recipe Button and BAKE!
