It feels like I can’t get enough of pretzels on cupcakes. It’s that salty taste, mixed with the sweetness or caramel and then the cake-i-ness of the cupcake. It’s a win-win-win. A trifecta of taste.
These cupcakes rank up there with the best that I have ever made. Honestly. One bite and all I could think of is a pay day bar. A pay day is basically salted peanuts around a center of caramel. Swap the pretzels for the peanuts and that’s exactly what I’m tasting.
The recipe for these is not difficult until you get to the Salted Caramel Buttercream which has instructions to make from scratch. I typically go and buy some prepared butter cream just in case my home made doesn’t taste so good. This way instead of aborting ship or tryin again, I can just pop the top and spread.
