If it looks like there is a lot going on with these cupcakes…you are right. The cupcake is Red Velvet and the lumpy frosting you see is a marshmallow, chocolate chip walnut mix.
A few things….
The topping is actually cool whip and cake mix. Once you whip it up, you add in the chocolate chips and walnuts. The recipe recommends using an ice cream scoop for the frosting but only if you have a smaller one.
I also have to admit that believe it or not this is my first red velvet recipe of any kind. I had no idea that red food coloring is used to create the “red”. I know it makes sense, but it’s something that I never really gave much thought.

After taking a break from bacon & baking while we did some kitchen modifications this is the perfect recipe to come back to. For those in the mood for something quick and easy, this is not it.
The best thing about this recipe is the candied bacon. I never made it before and everyone love it! I mean really really loved it. You are basically frying bacon in cinnamon and sugar!! Trust me, when these are complete not only will you have a visual masterpiece of a cupcake but if you are smart you will undercook some candied bacon and save some for the weekend. As I continue to look for the best recipes that the internet have to offer, I discovered that there is an entire Girl Scout series of cupcakes that not only include mint thins, Snikerdoodles but my favorite Samoa’s.
Sometime Samoa’s are called Caramel Delights which is exactly how I feel. Delighted!
If you are feeling really ambitions or perhaps you want to make your own Samoas. Honestly….I took one look at the recipe, took another look at the two boxes of Samoa’s I had in my kitchen cabinet and it was a no-brainer. I was just not feeling that ambitious. The recipe is here.

Look at these beauties!!
I had the recipe for these a few weeks ago however, the whole Boston bombing thing was a little too much and honestly I didn’t want to mention Boston when telling my kids why these cupcakes looked the way they did. So rather than make them and call them something else, I figured I would wait a few weeks until Boston is out of the news. As it’s still fresh in our memories, thank goodness the kids have moved past the experience on to something new.
Then I can bake and explain to my kids how a Boston Cream Pie is really a cake, and how it’s filled with custard and more importantly how great it all tastes!!
For this recipe you have a choice you can make things really easy by buying chocolate syrup and Vanilla pudding or you can make your own chocolate Ganache glaze and custard from scratch. For me it depends on how much time I have, the mood and who is getting the cupcakes.

It’s Cinco De Mayo and for us that means fight night. We host at our house because next week we will be at my sister’s house for Mother’s day.
Fight night means a bunch of out of shape men yelling at a bunch of in shape rich men and me running around making sure that everyone is happy. I noticed that we had an abundance of Chocolate based snacks but I still wanted to make some cupcakes. Removing chocolate out of the ingredient list left me with very few offerings so I hit the internet to come up with an alternative.
Voila! By way of a site called “Just Putzing.com” I found exactly what I was looking for, a Cheese cake, apple cupcake.
This recipe is of the variety that I like. It looks difficult but really isn’t. The apple topping is made from scratch and I recommend sticking to that strategy because unlike the store brought apple topping, you can tune this in to your liking. I guess you can tune the store brought stuff in to but there is much more satisfaction in cutting, coring and cooking the apples in a saucepan. Don’t be afraid to add a little “KICK” to the lemon juice and cinnamon for the apples. A touch of whiskey goes a long way with the fellas.
