Self Frosting Sweet Potato Cupcakes!

This recipe is the brain child of Shauna Sever from Shaunaserver.com.  She stumbled onto this while trying to adapt another recipe.  The whole self frosting part my sound like a gimmick but it’s actually true.

The cupcakes are made from roasted sweet potatoes and the frosting is a cream cheese based topping.  I know what you are wondering, “What is all this Self Frostng about”.

I was wondering the same thing too.  Basically you put in the cupcake mix, filling the cups only half way up.  Then  you plop the cream cheese topping directly onto the mix.  When you bake them both together, the topping kind of oozes up and over the cupcakes while he mix creates a wall.  I have to admit, it is pure genius.

WATCH OUT:

LUMPY MIX: Follow Shauna’s directions and like she says, when your sweet pototao mix is looking chunky and funky, don’t worry it will eventually smooth out to an even traditional looking cupcake mix.

This one definitely tastes as good as it looks.  I will admit, all of the cupcakes won’t look pretty.  Some will come out crazy and some will look just stunning.

My solution for that – OM-NUM NUM NUM.  Suddenly thy all look great.  What bad ones?

Flaming Strawberry, Chocolate Cupcakes – Recipe

After the success of my last flaming cupcakes (also from Sprinke bakes ) I had to try these.

FIRST THINGS FIRST

The cupcakes are the easy part.  Although there is a recipe at Sprinkle Bakes, just about any chocolate cupcake recipe that you have should do the trick.  I wouldn’t waste too much time here at all.  The real fun is the flaming strawberries.  However, I did use their recipe for the frosting. It’s a butter, sugar cocoa powder mix (the detailed recipe is below) that we have almost all seen before but for some reason this frosting turned out better then I’ve made in the past.

Now for the fun part.  I suggest right off the bat to use Bacardi 151  The recipe says anything 80 proof or higher but I tried a few and the Bacardi by far was the easiest to light.

NOW FUN PART

You have to get the biggest strawberries you can find.  I always see these huge overpriced Organic strawberries at ShopRite . The ones’ that I always say are for the rich families.  Those.  Use Those.

You actually have to hollow out the strawberry.  I happen to have this set of small condiment spoons, which I never, ever use for anything, that were absolutely prefect for this.  Thank God I didn’t re-gift them.  Once you get a nice looking hollow cherry, stick it in the frosting and make sure it’s level and secure.  Sit it there and bang on the table a few times to make sure it doesn’t move. Any strawberries that tear, eat them and start fro scratch.

Once you have your little Strawberry cups you can now pour in the bicardi and light it.  Viola.  It looks so good that you will impress yourself.

Apple Pie Cinnamon Cupcakes – Recipe and Video!

Well it’s fight night in my house.  Two undefeated fighters (Floyd Mayweather  vs Canelo Alvarez)  and a house full of fight fans.  When you pay $64 dollars for a paid per view event it hurts a lot less when you split it 5 ways.

So what better way to make my baking comeback on a chilly end of summer day, a house full of snackers and  a brand new recipe to try out.   The stars as they say….are aligned.

This recipe is crazy because it’s made from cinnamon rolls hat are flattened!  That’s it.  These are not your ordinary cupcakes.  No mixing, no batter.   Who would have ever thought to use cinnamon rolls.  I guess that’s why we have the internet.

So technically it’s not a cup cake, but a cinnamon roll cup, with apples inside and baked to pure perfection.

The best part about these is they only take 12 minutes to cook.  However it seems like they take forever too cool.  If you want to have the whip cream affect you will have to wait….but it’s worth it.

As summer starts to wind down, so does the hot days in the kitchen and my baking starts to pick up.  I typically bake more in the winter just because of school functions and holidays, it just works out that way.  Speaking of working out, I also tend to lose weight in the summer and gain a few sizes during the off season.

I have whittled my way down to a solid size 8, down from a winter time size 12.  I have gone this year down to a size 6 and I’m always about a cupcake away from 8 and two cupcakes away from a 12.  Let me tell you, cooking German Chocolate cupcakes today does not help.

This is a recipe that I want to get perfected for the upcoming school season as I think they will do well at the bake sales.  The scary part about this cupcake is simply the frosting.  It just looks scary but when you breakdown the recipe it’s quite simple: store brought shredded coconut, store brought pecans, egg yolks, sugar and butter.  See – a snap.

You will have to decide if you make the cupcakes themselves from scratch or use a bake mix.  For me it comes down to time.  I’m not going to kid myself and tell you it always taste better from scratch as I’m not that good.  I just want to perfect the topping, once I have that down the rest I can do in my sleep.

Baked Alaska Cupcake Flambe – Recipe

This is one the best recipe’s I’ve found on the internet…hands down.  Who would have “Thunk it”.  Not only will you steal the show with these beauties they also taste damn good.

What you don’t see in the picture and if you are a novice like myself who didn’t realize that there is actually ice cream inside these cupcakes!  They are basic vanilla cupcakes and the centers are cut out and filled with ice cream.  In my case, pure chocolate ice cream because I wanted that chocolate – vanilla contrast.  However, you can choose any flavor you want.

The ice cream is then covered by the Flambe (the thing that actually burns on top of the cupcake).  The Flambe is basically a frosting (egg whites, sugar and cream) mixed with Brandy.  As Heather from sprinklebakes says – heating up the brandy beforehand allows for a longer, slower burn.

I say again…don’t be afraid of this Recipe.  It’s not easy but it’s not difficult.  I would rate it right down the middle.  I really didn’t run into many issues and the response I had was ridiculous.  Bring these out and watch the response.  You will blow them away.

Last bit of advice, I used the set up exactly like in the picture.  I had white microwavable saucers that looked the same and also a metal pan.  I even cleared the table cloth and served them on my glass table and of course had the fire extinguisher nearby.  My husband always says “Don’t burn the house down”, I wanted to make sure I followed that advice!  J  I also lit a practice one first because I had no idea what was going to happen.

Rocky Road, Red Velvet Cupcakes – Recipe

Red Velvet Rocky Road Cupcakes

If it looks like there is a lot going on with these cupcakes…you are right.  The cupcake is Red Velvet and the lumpy frosting you see is a marshmallow, chocolate chip walnut mix.

A few things….

The topping is actually cool whip and cake mix.  Once you whip it up, you add in the chocolate chips and walnuts.   The recipe recommends using an ice cream scoop for the frosting but only if you have a smaller one.

I also have to admit that believe it or not this is my first red velvet recipe of any kind.  I had no idea that red food coloring is used to create the “red”.  I know it makes sense, but it’s something that I never really gave much thought.

Yes, you read it correctly  These cupcakes are essentially everything you need for a three course breakfast including your coffee.

After taking a break from bacon & baking while we did some kitchen modifications this is the perfect recipe to come back to.  For those in the mood for something quick and easy, this is not it.

The best thing about this recipe is the candied bacon.  I never made it before and everyone love it!  I mean really really loved it.  You are basically frying bacon in cinnamon and sugar!!  Trust me, when these are complete not only will you have a visual masterpiece of a cupcake but if you are smart you will undercook some candied bacon and save some for the weekend.  You will be everyone’s favorite chef.  Now Hit the Recipe Button and Bake!!
